Pineapple Teriyaki Chicken Breast with Ginger Garlic Mashed Sweet Potatoes and Steamed Asparagus
Crust-less Apple Pie (Gluten Free & Sugar Free)
-Cut 1 large Honeycrisp or Braeburn apple into small slices
-Melt 2 Tbsp of butter in a small pan over medium heat
-Add 1 Tsp of Truvia
-Stir frequently until the butter/Truvia mixture begins to brown and become bubbly
-Add the apple slices to the pan with the butter mixture
-Sprinkle 1/2 Tsp of cinnamon and 1Tbsp of almond meal on the apples
-Toss the contents in the pan with a spatula
-Stir occasionally until the apples become soft, but not mushy
-Enjoy with a dollop of home made whipped cream or some sugar free ice cream and a sprinkle of sliced almonds!
Gluten Free, Sugar Free Peanut Butter “One Minute Cookie”
4 Tbsp GF Baking Flour
3 Tsp Truvia
1/8 Tsp Sea Salt
1 Tsp GF Vanilla Extract
2 Tbsp Butter (or Coconut Oil)
2 Tbsp Natural Peanut Butter
1 Large Egg
(Makes 2 large cookies)
Mix all ingredients in a bowl until smooth. Distribute mixture evenly between 2 medium ramekins. Place each ramekin individually in the microwave and cook on high for 53 seconds.
Enjoy with a variety of toppings: Bananas, Almonds, Whipped Cream and Chocolate Syrup is highly recommended!

Melt 3 squares of milk chocolate in the microwave or on the stove top.
Mix in 1 tsp. of the PB until the consistency is smooth.
Peel a banana and place a skewer through the middle, length-wise.
Coat banana with chocolate and PB mixture. Let excess drip off, then dust the outside of the banana with the almond meal.
Place in freezer for 15-20 min, then serve and enjoy!
Makes enough to coat 1 large banana.
