Melt 3 squares of milk chocolate in the microwave or on the stove top.
Mix in 1 tsp. of the PB until the consistency is smooth.
Peel a banana and place a skewer through the middle, length-wise.
Coat banana with chocolate and PB mixture. Let excess drip off, then dust the outside of the banana with the almond meal.
Place in freezer for 15-20 min, then serve and enjoy!
Makes enough to coat 1 large banana.

Flourless, Sugar Free Peanut Butter Chocolate Chip Cookies (with Truvia)
1 large egg
3/4 cup sugar (or sugar substitute such as Truvia or Splenda for sugar free recipe)
1 teaspoon baking soda
1 cup creamy unsweetened peanut butter
1/2 teaspoon vanilla extract
1/3 cup chocolate chips (I melted Trader Joe’s Low Carb No Sugar Added Milk Chocolate, then used a ziplock bag to pipe chips onto foil and allowed the chips to harden in the freezer for 15 minutes)
Preheat oven to 350°F and line a baking sheet with parchment paper (or place a Silplat on the baking sheet).
Beat together egg, sugar, baking soda and vanilla. Beat in the peanut butter. Stir in chocolate chips if using. (If the batter is too dry, add some coconut oil 1 Tbsp at a time until the batter is more moist.)
Drop dough by teaspoonfuls onto prepared baking sheet, pressing lightly with the back of a fork. Bake for 10 minutes, until lightly set. Transfer to a wire rack to finish cooling.

Healthy, Quick & Easy Dinner:
Lean ground turkey, diced onions, minced garlic, eggplant (cubed), kale, petite diced tomatoes (canned), salt, pepper & no-salt seasoning.
Sauté onions and garlic in olive oil for about 2 minutes over med heat. Add ground turkey and break apart into small bites with spatula. Sauté for another 2 minutes. Add remaining ingredients, mix to combine, cover and let the eggplant and kale sweat for about 10 minutes stirring occasionally. Remove from heat and serve!
