Smoked Salmon and Goat Cheese Frittata
Gluten Free Apple, Cinnamon and Walnut Scones
Basic GF scone recipe curtesy of King Arthur Flour (http://www.kingarthurflour.com/recipes/gluten-free-scones-recipe) with few modifications:
-No Xanthan Gum
-Truvia instead of sugar
-Heavy cream instead of milk
-Apple, Cinnamon & Walnuts instead of dried fruits
Crust-less Apple Pie (Gluten Free & Sugar Free)
-Cut 1 large Honeycrisp or Braeburn apple into small slices
-Melt 2 Tbsp of butter in a small pan over medium heat
-Add 1 Tsp of Truvia
-Stir frequently until the butter/Truvia mixture begins to brown and become bubbly
-Add the apple slices to the pan with the butter mixture
-Sprinkle 1/2 Tsp of cinnamon and 1Tbsp of almond meal on the apples
-Toss the contents in the pan with a spatula
-Stir occasionally until the apples become soft, but not mushy
-Enjoy with a dollop of home made whipped cream or some sugar free ice cream and a sprinkle of sliced almonds!
Gluten Free, Sugar Free Peanut Butter “One Minute Cookie”
4 Tbsp GF Baking Flour
3 Tsp Truvia
1/8 Tsp Sea Salt
1 Tsp GF Vanilla Extract
2 Tbsp Butter (or Coconut Oil)
2 Tbsp Natural Peanut Butter
1 Large Egg
(Makes 2 large cookies)
Mix all ingredients in a bowl until smooth. Distribute mixture evenly between 2 medium ramekins. Place each ramekin individually in the microwave and cook on high for 53 seconds.
Enjoy with a variety of toppings: Bananas, Almonds, Whipped Cream and Chocolate Syrup is highly recommended!

Sugar Free Peanut Butter Chocolate Covered Banana Dusted with Almond Meal
Trader Joe’s No Sugar Added, Low Carb Milk Chocolate
Trader Joe’s All Natural Peanut Butter
Trader Joe’s Almond Meal
Melt 3 squares of milk chocolate in the microwave or on the stove top.
Mix in 1 tsp. of the PB until the consistency is smooth.
Peel a banana and place a skewer through the middle, length-wise.
Coat banana with chocolate and PB mixture. Let excess drip off, then dust the outside of the banana with the almond meal.
Place in freezer for 15-20 min, then serve and enjoy!
Makes enough to coat 1 large banana.
