Crust-less Apple Pie (Gluten Free & Sugar Free)
-Cut 1 large Honeycrisp or Braeburn apple into small slices
-Melt 2 Tbsp of butter in a small pan over medium heat
-Add 1 Tsp of Truvia
-Stir frequently until the butter/Truvia mixture begins to brown and become bubbly
-Add the apple slices to the pan with the butter mixture
-Sprinkle 1/2 Tsp of cinnamon and 1Tbsp of almond meal on the apples
-Toss the contents in the pan with a spatula
-Stir occasionally until the apples become soft, but not mushy
-Enjoy with a dollop of home made whipped cream or some sugar free ice cream and a sprinkle of sliced almonds!
Gluten Free, Sugar Free Peanut Butter “One Minute Cookie”
4 Tbsp GF Baking Flour
3 Tsp Truvia
1/8 Tsp Sea Salt
1 Tsp GF Vanilla Extract
2 Tbsp Butter (or Coconut Oil)
2 Tbsp Natural Peanut Butter
1 Large Egg
(Makes 2 large cookies)
Mix all ingredients in a bowl until smooth. Distribute mixture evenly between 2 medium ramekins. Place each ramekin individually in the microwave and cook on high for 53 seconds.
Enjoy with a variety of toppings: Bananas, Almonds, Whipped Cream and Chocolate Syrup is highly recommended!

Trader Joe’s All Natural Peanut Butter
Trader Joe’s Almond Meal
Melt 3 squares of milk chocolate in the microwave or on the stove top.
Mix in 1 tsp. of the PB until the consistency is smooth.
Peel a banana and place a skewer through the middle, length-wise.
Coat banana with chocolate and PB mixture. Let excess drip off, then dust the outside of the banana with the almond meal.
Place in freezer for 15-20 min, then serve and enjoy!
Makes enough to coat 1 large banana.
Coconut Curry Cod with Yellow Potatoes, Carrots, Peas, Onions and Garlic
Another take on Eggs Benedict:
Eggs (sunny side up), over diced Yellow Potatoes (pan fried) with Oil, Onions, Garlic, Rosemary, Chili Powder, Salt & Pepper, fresh Guacamole with Lemon Juice, Garlic, Salt & Pepper, and of course, a traditional Hollandaise Sauce to top it all off.
Flourless, Sugar Free Peanut Butter Chocolate Chip Cookies (with Truvia)
1 large egg
3/4 cup sugar (or sugar substitute such as Truvia or Splenda for sugar free recipe)
1 teaspoon baking soda
1 cup creamy unsweetened peanut butter
1/2 teaspoon vanilla extract
1/3 cup chocolate chips (I melted Trader Joe’s Low Carb No Sugar Added Milk Chocolate, then used a ziplock bag to pipe chips onto foil and allowed the chips to harden in the freezer for 15 minutes)
Preheat oven to 350°F and line a baking sheet with parchment paper (or place a Silplat on the baking sheet).
Beat together egg, sugar, baking soda and vanilla. Beat in the peanut butter. Stir in chocolate chips if using. (If the batter is too dry, add some coconut oil 1 Tbsp at a time until the batter is more moist.)
Drop dough by teaspoonfuls onto prepared baking sheet, pressing lightly with the back of a fork. Bake for 10 minutes, until lightly set. Transfer to a wire rack to finish cooling.
Curry Cream Sauce
1 Tbsp Butter
1/2 Small Onion
1 Tsp Minced Garlic
2 Tsp Yellow Curry Powder
1/4c Vegetable Broth
3/4c Heavy Cream
Dash of Salt
